Been playing with this VARIO and pulling shots. Tamp pressure, grind settings, different coffees all have different results in the Espresso shot. How much crema do you like? I prefer a long pull, 35 seconds or so. Share your expertise?

Let's talk espresso! I'm going to be experimenting with some different bean combinations and roast levels for espresso. You might be surprised to know espresso is not confined to french or italian roasts that lose the original flavor profile of the bean, although some do prefer that strong, burnt finish to their espresso shots. Here I've made a very non-traditional espresso from a medium roast Kenyan! It is very good.
I visited a local shop and got a picture of the roasted bean menu. I carry 3 of the coffees that are on the menu for a lot less. My roast dates are as new or newer guaranteed. And check out that Jamaican Blue Mountain, just $88.50 per pound. I'll take a dozen, please! Ridiculous to pay that much for coffee. Also the gold tone filter pictured is just what you need to brew Mike's Natural Roast in your Keurig, for a much improved cup.
I roast 3 sample bags at the same time, then let them rest in airtight containers overnight.
The sample batches are then ground and placed in smaller airtight containers. From there I do an aeropress shot from each one, let them cool, then taste each one, much like wine tasting. I take notes, and rate each coffee based solely on taste quality. I also have an average everyday tester person (my wife) brew and taste each one, and finally, I make the decision of which ones to buy in bulk, for sale to you!

Our families favorite roast...it really grows on you. Give some a try, I bet your experience is better than any store bought coffee you've ever had. My coffee compares to Zanzibar's and Java Joes's for freshness and quality. But...you don't have to pay for any overhead!
By now you know my motto is: "Friends don't let friends drink crap coffee". Recently I discovered the beautiful island of Grand Cayman has virtually no good coffee. I discovered only a handful of coffee shops on the Island. I finally did have a long conversation with a worker at Kaibo Coffee House (Great name for it)! She showed me where their coffee comes from....Miami. Not good. Pre-Roasted as well. Not fresh. Thankfully I brought a couple dozen packets of VIA (not good but not totally undrinkable). I'd estimate 90-95% of the coffee out there is junk. It just takes a small effort to go from undrinkable garbage to the wonderful elixer of life: Good water, good quality freshly roasted coffee, ground and brewed within two weeks of roasting. A good brew method, like Aeropress. Go for it, you'll experience a side of life that is most enjoyable!

Your peak is within 4 days of roasting. After 1 month, you've lost most of the quality of the roast.
