I roast 3 sample bags at the same time, then let them rest in airtight containers overnight.

The sample batches are then ground and placed in smaller airtight containers. From there I do an aeropress shot from each one, let them cool, then taste each one, much like wine tasting. I take notes, and rate each coffee based solely on taste quality. I also have an average everyday tester person (my wife) brew and taste each one, and finally, I make the decision of which ones to buy in bulk, for sale to you!
